Red Beans and Rice


3 cups dark red kidney beans (~1.5 lbs)

4 cups rice

1.5 lbs Cajun sausage

3 lbs small onions

4 sticks celery

1 clove elephant garlic

1 bell peppers

1 jalapeño

3 bay leaves

2 tbs paprika

1 tsp pepper

1 tsp sea salt

1 tsp worcestershire sauce

1 tsp habanero hot sauce


(Grossly oversimplified, use your favorite search engine as needed)

Soak and cook beans.  Finely dice all vegetables.  When ready and add the sausage, vegetables, IMG_5514herbs, spices, and sauce.  Cook for one hour while you prepare the rice.

Serve with beer and corn bread at a 1.5:1 rice to bean goo ratio.
